Flavour-O-Rama Cheesy Black Bean Fried Tacos

Ingredients:

  • 8 to 10 soft corn tortillas

  • 1 can (15.5oz) of black beans

  • 1 ½ shredded cheese (vegan/non-dairy cheese may be used as well)

  • ½ cup red onion, chopped

  • 1 teaspoon of cilantro

  • 1 teaspoon of ground cumin

  • 2 tablespoons of Flavour-o-rama seasoning

  • 1 teaspoon of minced garlic

  • Cooking oil

Instructions:

First, open the can of beans, and rinse off the beans with water and drain in a colander.

Next, begin to chop onions. If using fresh garlic, mince garlic. After the beans have been washed and drained, add the Flavour-o-rama seasoning, onion, cumin, minced garlic and cilantro to beans.

Begin to mix all of the ingredients together and begin to slightly mash the ingredients with a fork.

Begin to heat up a frying pan or skillet on medium to low heat, adding in cooking 2 tablespoons of cooking oil (you will need to add oil to the pan during cooking process to prevent sticking of each taco).

Begin to heat each side of the corn tortilla, about 1-2 minutes per side. As each side of the tortillas bubbles and becomes golden in color, begin to scoop 2 teaspoons of the black bean mixture onto the tortilla. Add about 1 to 2 teaspoons of cheese.

Begin to fold the tortilla in half, over the black bean and cheese mixture, and press down, creating the shape of the taco. Press onto the taco for 2 minutes. Then, flip the taco to the other side and press down in the pan.

The taco will begin to gain more color on each side and begin to become crisp. Take out the taco from the pan when each side is golden brown, crispy and cheese begins to melt.

Serve with the desired side such as salsa, sour cream, guacamole, hot sauce. The recipe makes 8 to 10 tacos.
