  • 6 lamb chops (weighing 2 to 2.5 lbs)

  • 1 tbsp of avocado oil + more for frying

  • 1 tbsp of coconut sugar

  • 1 tbsp of tamari soy sauce

  • 1/2 tbsp of freshly squeezed lemon juice

  • a pinch of salt

  • Freshly chopped parsley leaves to garnish

Directions

  1. Whisk together all the ingredients except lamb chops and parsley in a large bowl until homogenous.

  2. Place the lamb chops in the bowl and massage the spice and condiment mix all over the meat until evenly distributed.

  3. Marinate for 6 to 8 hours or overnight.

  4. When ready to cook, preheat the oven to 450° F.

  5. Warm an oven-proof skillet to high heat with a bit of avocado oil.*

  6. Brown the lamb, chops in a single layer for about 2 minutes, and then flip over and brown the other side for another 2 minutes.

  7. Place the skillet in the middle rack of the oven and roast for about 4 to 6 minutes or until the desired doneness(for medium-rare, a thermometer should read 135° F; medium, 140° F).

  8. Once you take the skillet out of the oven, let the meat rest for at least 5 minutes.

  9. Garnish with freshly chopped parsley and enjoy with your favorite holiday side dishes!
