Flavour-O-Rama Seafood Croquettes Recipe: Perfect for Any Occasion!

Instructions:

Clean and pat dry fresh fish. You may clean the fish with lemon, vinegar and salt. After pat drying fish, cut fish into bite-sized pieces and set aside. Begin to prepare and chop all vegetables, herbs and aromatics. Heat oil over medium heat in a skillet. Sauté shallots, onions and garlic in cooking oil for about 2 minutes or until softened, mixing frequently. Add in fish pieces and wine, and stir. Cover the pot and cook for about 2 minutes. Uncovering the pot, break up the fish while stirring for about 3 minutes or until cooked through and flaked. Take off of the heat and set aside.

Prepare the remaining croquette ingredients (spices, flour, breadcrumbs, herbs) and mix in with the cooked fish. Then, mix well until you get a soft but pliable mixture.

Cover the mixture with plastic wrap or pot top and place in the refrigerator for 30 minutes.

Remove from the refrigerator and begin to shape mixture into a round shape. Each piece can be 1/3 of an inch thick, and the width of the palm of you hand. If mixture is still moist and is falling apart, add 1/3  or ¼ cup of breadcrumbs, and place in the freezer for two to three minutes. Add oil to a pan, and heat oil on low to medium heat. Take out croquettes from the freezer. Begin to dip them first in the eggs and then in the breadcrumbs. You may add additional panko breadcrumbs when the breadcrumb mixture becomes too saturated by the egg. This ensures crispiness. 

Fry in vegetable oil, frequently flipping on each side over medium heat until golden brown. Drain excess oil. Serve with desired sauce or sides.

  • 1 kg (35oz) choice of white fish, i.e. cod fillet deboned (about 2 ½ lbs)

  • 1 Medium Onion, chopped

  • 3 green onion, chopped

  • 2 Carrots, grated

  • 1 ½  Tbsp Dijon Mustard

  • 1 ½  Tbsp Olive oil

  • 2 Tbsp panko Breadcrumbs 

  • 1 Tbsp ritz cracker crumbs (20 crackers, crushed)

  • 1 tbsp celery leaves, chopped

  • 1 Tbsp all-purpose Flour

  • 1 bunch parsley, finely chopped

  • 5 Cloves of garlic, crushed

  • 2 tsp of oregano

  • 1 tsp onion powder

  • A pinch of black pepper 

  • 2 tbsp of Flavour-o-rama Seasoning

  • 2 shallots, finely chopped

  • 1 tbsp thyme

  • ¼ cup dry white wine

Ingredients for pan frying:

  • 2 eggs beaten

  • 2 cups panko breadcrumbs

  • ½ cup ritz cracker crumbs 

  • Vegetable oil for the pan
