Instructions:

First, begin to cut the Brioche loaves into one and a half inch slices. Lay aside the bread, to allow the slices to slightly dry (this helps with the absorption of the custard). Next, begin to mix all the ingredients of the filling together. If desired, the ricotta may be drained in the fridge overnight with cheesecloth and a bowl, to remove excess moisture. After mixing the filling, set aside. Then, begin to use a small sharp knife, such as a paring knife, and create a hole at the bottom crust of each brioche slice. Slowing move the knife side to side once the knife is inserted in the bread, making room for the filling. Be careful not to pierce the sides of the bread. Set aside.

Put filling in a piping bag and begin to fill each slice with the cannoli filling. Next, mix all of the custard ingredients together, making sure that the eggs are completely beaten within the mixture. Begin to heat a pan on medium heat with butter or ghee (ghee or clarified butter has a higher smoking point and will not burn on high heat). Next, begin to dip each side of the filled slices for about 15 to 30 seconds per side, and add to heated pan. Cook each side until golden brown. Remove from pan. Garnish with powdered sugar, fruit, chocolate or other desired toppings. Enjoy!

Flavour-o-rama Cannoli-Stuffed French Toast (8 Servings)

Ingredients:

  • Eight (8) 1 ½ inch slices of Brioche bread (or two whole Brioche bread loaves)

Cannoli Filling

  • 8oz Mascarpone cheese

  • 1 ¼ cup Ricotta cheese

  • ½ cup powdered sugar

  • 1/3 cups mini chocolate chips

  • 1 tablespoon of vanilla

  • Custard Mixture for French Toast

  • 4 eggs

  • 1 cup coffee creamer

  • 1 cup of Half and Half or Heavy Cream

  • 2 teaspoons cinnamon

  • 2 teaspoon nutmeg

  • Drops of vanilla

  • ½ tablespoon of Maple syrup
