INSTRUCTIONS:
First, make sure that the fresh fish is cleaned, descaled, gutted and pat dried (fresh fish may be previously descaled and gutted when purchased). Next, begin to use kitchen shears and cut away the fins of the fish. These can be found on either side, the top of the body, and the bottom of the belly of the fish. Be careful of sharp fins while cutting. Once all of the fins are cut off, set fish aside.
Then, using a sharp knife, begin to make slits in each side of the flesh of the fish. This will help the seasoning penetrate the flesh of the fish.
Next, begin to cut vegetables to make a seasoning paste. Begin to chop one of the two bell peppers, the garlic cloves, scallions, parsley, ginger, and ½ of the yellow onion. Place all chopped vegetables in a blender. Add at least one tsp of water to help the vegetables blend easier. Blend vegetables until smooth.
Then, cut the red onion into whole rings, and cut the other bell pepper into rings. Place the vegetables flat on a baking dish or oven grille pan. Spray the pan with cooking spray first, place vegetables on pan and spray the top of the peppers and red onion with cooking spray. Set aside.
Next, add in dry seasonings, honey, lemon juice and oil. Stir. Begin to rub the mixture onto the flesh of the fish, making sure that all of the seasoning gets into the slits that were made in the fish earlier. Place fresh lemon slices and thyme sprigs in the opening of each fish. When fish is completed covered with seasoning, cover with plastic wrap or foil, and place in the fridge for at least 30 minutes.
Next, place fish on top of the red onion and pepper rings. Then, begin to broil fish on high for 10 minutes total, 5 minutes per side. When flipping the fish, baste fish with more cooking oil, or more of the marinade. (Place the marinade in the microwave or on the stovetop to cook it a bit. Do not put unheated or uncooked marinade on the cooked fish). After both sides have been broiled, flipped and basted, place back in oven for 25 minutes at 400’ degrees Fahrenheit. Take out of oven and serve hot with desired sides.
