Spicy Creamy Tomato Pasta with Shrimp and Spinach (dairy free, gluten free!)

Pasta Sauce Ingredients:
½ can of tomato paste
One medium size onion or three small shallots, chopped
2 cloves of garlic, minced
2 tsp cayenne pepper
1 tablespoon of Flavour-O-Rama seasoning (best with either ‘Sizzlin’ Medium Flavour or “Inferno” Hot Flavour)
1 tsp dry thyme
1 tsp dry parsley
1 tsp rosemary
1 tsp onion powder
1 tsp black pepper
1 tsp white pepper
2 tbsp red pepper flakes
1 ½ cup of spinach
1/3 of a cup of dairy free heavy whipping cream (i.e. Silk brand Heavy Whipping Cream)
2 tbsp of avocado or olive oil
2 tbsp of butter (vegan or plant-based butter will work as well)
Shrimp Ingredients:
1 pound of fresh deveined shrimp, cleaned
1 tablespoon of Flavour-O-Rama seasoning (best with either ‘Sizzlin’ Medium Flavour or “Inferno” Hot Flavour)
1 tsp dry thyme
1 tsp dry parsley
1 tsp rosemary
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp of lemon juice
1 tsp avocado or olive oil
Pasta
1 lb of gluten-free pasta (can use penne, fettuccine, thin spaghetti, etc).
Cooking Instructions:
Shrimp
First, make sure that shrimp is cleaned and deveined (thawed if frozen). Add all dry seasoning to shrimp in a bowl. Add lemon juice. Add oil. Sprinkle about 1 tsp of oil onto shrimp. Mix altogether and set aside. Heat a medium cooking pan on the stove on medium heat for about 3 to 4 minutes. Add shrimp and cook on both sides until slightly pink. After shrimp is cooked, take out of pan and put aside.
Pasta
For pasta, follow cooking instructions as seen on pasta packaging. For added flavor, about 2 tsp of Flavour-O-Rama seasoning may be added to water, prior to boiling pasta. Set cooked pasta aside as well as 1 cup of pasta water (pasta would be best “al dente”).
Pasta Sauce
In same pan used to cook shrimp, (the drippings and bits from the cooked shrimp add to the flavor!), on medium high heat, add 1 tablespoon of olive or avocado oil and butter into pot. After 1 min, add onions to pot and begin to sauté until onions begin to sweat and start to caramelize (onions will begin to get soft and turn brown on the edges) Next, add tomato paste and cook with onions on medium-low heat for about 5-6 mins, continuing to stir to prevent burning. Next, add minced garlic. Add cayenne pepper. Continue to stir. Add spinach. Next, ddd pasta water, then vegan heavy whipping cream, then add set pasta water. Add remaining of dry seasonings. Stir sauce all together. Add pasta and gently stir just to coat the noodle with sauce. Then, add shrimp. Stir gently to coat. Serve warm, may add parsley for garnish. Enjoy!
