INSTRUCTIONS:
First, begin to prepare the mise en place for the recipe, to make cooking the meal easier and more organized. Begin to put together the dry seasonings. These seasonings will be split between the meat, and the sauce. Mix well and set aside. Next begin to dice the shallots. Next, if using fresh garlic cloves, mince the cloves of garlic. Next, take the kale or spinach and wash thoroughly. Set kale aside. Now, begin to chop the sundried tomatoes. Next, add the sundried tomato oil to cleaned chicken. Add half of the dry seasonings. Mix until chicken is well coated and set aside.
Add ghee/clarified butter to a cast iron pan or skillet on medium heat. Clarified butter is great for the chicken because it can withstand high temperatures, while giving the meat time to cook. Coat the chicken with flour on each side. Cook the chicken for 4-5 minutes on each side, until golden. Set aside.
Next, in the same pan, add in the avocado oil and butter. Then, add in the shallots. While shallots begin to caramelize, add in the minced garlic. Add in the tomato paste. Next, add in the chopped sundried tomatoes. Stir ingredients together, letting the tomato paste begin to cook. Deglaze the pan by adding in the white wine. Then, add in chicken stock. Lower the heat to medium low. Add in the heavy cream. Next, add in the cooked chicken. Then, add in the parmesan cheese and the kale. Then, add in the remaining dry seasonings. Let all of the ingredients simmer together for 10 to 20 minutes, or until kale is wilted and sauce is completely incorporated.

INGREDIENTS FOR CHICKEN AND SAUCE
1 ½ pounds of boneless, skinless chicken thighs
2 large shallots, diced
1 cup of chicken stock (substitute for low sodium chicken stock or broth)
1 cup of heavy cream
½ cup white wine
1 ½ to 2 cups of kale (can substitute for spinach)
3oz of tomato paste
½ cup of grated parmesan cheese
1 ½ tablespoon of sundried tomatoes in oil
1 tablespoon of sundried tomato oil
½ cup all-purpose flour
2 tablespoons of avocado oil (for sauce)
2 tablespoons of butter
1 tablespoon of clarified butter/ghee (for chicken)
2 tablespoons of minced garlic or 5 minced garlic cloves
½ reserved pasta water
INGREDIENTS FOR DRY SEASONING
(will be split in half for chicken and sauce)
1 ½ tablespoon of Flavourorama seasonings
3 teaspoons of Italian seasoning (substitute with 1 tsp herb de provence, 1 tsp of basil, 1 tsp of oregano)
½ tablespoon of smoked paprika
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 tablespoon black pepper
1 tablespoon of red pepper flakes
