Connecticut Lobster Roll
Ingredients:
16oz (4-5) frozen lobster tails
1 stick and 2 tbsp butter
1/2 fresh lemon (juice and zest)
1 small shallot
1 tbsp fresh chives, chopped
1 tsp fresh dill, chopped
4 cloves garlic, minced
1 tsp black pepper
1 tsp garlic powder
1 tsp Flavour-O-Rama seasoning
2 brioche buns or New England rolls
Connecticut Lobster Roll
Instructions:
Begin to steam the lobster tails in a stovetop steam basket for 5-8 minutes. The lobster tail will become bright red in color, while the tails will begin to curl under. Afterwards, take lobsters out of steam basket and place in ice cold water or an ice bath, in order to stop the cooking process. After lobster is cooled, proceed to remove the meat from the shell thoroughly, making sure that all of the lovely meat is used! Cut some of the lobster pieces into large chunks.
Next, on medium-low heat in a pan, begin to melt the stick of butter. As butter is melting, add in the garlic and shallot. Add in the chives and the fresh dill (save a small amount of chives and dill for garnish). Next, add in the lobster meat. Then, add in the remaining dry seasonings. Squeeze the juice from half of a lemon and include at least 2 teaspoons of lemon zest. Coat the lobster meat in the butter mixture.
Then, use the remaining butter, toast the buns on each side, until golden brown.
Add in the buttery lobster meat into the toasted buns. Garnish with chives, dill and parsley. Serve warm.
